SUMMER BOAT SALAD


The summer is a great time to think of fruits and vegetables. The meetings and gatherings are a great place to provide the Summer Boat Salad along with a pitcher of ice-cold lemonade. I remember as a young girl when mother hosted the women group or family members she would serve the salad to everyone and I enjoyed helping her to make the salad dishes. My mother went to the local Dairy Queen and bought those disposable plastic banana split boats to put her famous Summer Boat Salad together. She would make kosher potato salad, kosher chicken salad and fruit salad. She then would put leaf lettuce on the bottom of each boat adding a scoop of each salad in a rowing making it appear like a banana split. Then on top, she would put a cherry tomato but on the fruit salad, she would put a real cherry. Then she would place kosher dill pickles

around the salad and crackers. After that we would saran wrap each boat and refrigerate. My mother was ready for the meeting or gathering. Everyone enjoyed the Summer Boat Salad.
